NOSE: Green apple peels and dried stone fruits are joined by milksoaked breakfast cereals, whilst vanilla sponge cake and desiccated coconut
sit with buttered toast.

PALATE: An impactful combination of bright orchard fruits, baked apricots and sprightly pepper spicing sit with gently charred oak and creamy vanilla.

FINISH: Lasting sweetness tempered by persistent spicing.

Our rich distilling heritage has shaped and influenced our approach to spirit making. We are proud of our past and pay tribute to it with our name Bimber, which means ‘moonshine’ in Polish. Our logo draws from the eagle which sits atop of the Polish Coat of Arms. That eagle faces to the left – into the past. Our modern interpretation faces to the right – looking to the future.

AWARDS: In just a few years, Bimber has won numerous international awards for its London single malt whiskies, including being a category winner for English whisky at both the 2020 and 2021 World Whisky Awards

TRUE CRAFT: We source our single farm two-row Concerto and Laureate barley from from Fordham & Allen in Hampshire. Our grain is not milled – instead, it is simply cracked to produce a high-level of extract and fermentability whilst preserving a clear wort. Fermentation takes place over seven days within our custom-created, open-topped American oak washbacks. It produces a bright, pure and fruity wash. Distillation occurs in our two copper pot stills, which utilise direct fire, resulting in a highly textural spirit.

CASKS: Bimber matures in a wide variety of wood types – from American ex-bourbon through the full spectrum of European sherry oak, and in a growing number of specialist casks such as imperial stout, madeira and wine.

MATURATION: Maturation takes place in both Bimber’s bonded-warehouse and within the distillery itself. With two environments, possessing differing heat and humidity levels, our team manipulate our casks in order to achieve maturations that are in harmony with our spirit and true to our London roots.

COMMUNITY: Bimber’s highly active global community of whisky lovers are supported though our Founder and Klub programmes and also have the opportunity to lay down their own small stock of Bimber via our Klub Cask Share initiative.

 Bimber Distillery was founded by whisky lovers, with a mission to produce high-quality single malt whisky with character, using traditional methods that are rarely seen today.

 The journey begins at our single farm, where 100% of our barley is grown. It is then traditionally floor malted, hand-mashed and fermented slowly for seven days in our wooden washbacks that were hand-made at our own cooperage. We use direct fire to heat our small copper pot stills, and mature our spirit in hand-selected casks. Finally, our whisky is bottled onsite at our distillery.

 Our hand-crafted approach to whisky production passionately combines traditional methods, expertise and an absolute commitment to quality.

 Bimber’s first casks were laid down on the 26th May 2016 and we released our inaugural single malt whisky (The First) three years later in September of 2019 – the limited release of 1,000 hand numbered bottles sold out in 3 hours. Bimber will be releasing a wide range of new single malt whiskies – all with our trademark accessible, fruit forward character – all handcrafted with passion.
